What to notice

Meet the oil before the ingredients do.

Aroma, fruit, bitterness and pepper can all move once the oil meets heat, salt or acid.

The point is not to turn dinner into an exam. It is to give the oil one quiet moment on its own—then see how it completes the food.

A useful first comparison.
