The provenance

Unearthed only in winter.

Foraged in the dense limestone woodlands of the Pollino and Calabro-Lucano mountains, our Tartufo Nero Pregiato (Tuber melanosporum Vitt.) represents the apex of subterranean Mediterranean gastronomy.

Unveiled exclusively during the winter frost, each tuber is harvested by master tartufai and their trained dogs, graded by hand, and packed without synthetic aromas or additives. Available in strictly limited annual tranches for culinary ateliers and boutique stockists.

Experienced tartufai work with trained dogs to locate individual tubers, avoiding indiscriminate disturbance of the woodland floor.

Each opening is carefully returned after harvest, protecting the soil structure and the habitat on which future seasons depend.

Seasonal volumes remain finite and may vary according to maturity, weather and the natural yield of the foraging grounds. Final product documentation accompanies each released tranche.
